Recipe: Triple Chocolate Cookies

It has been so long since I posted a cooking-related post! I’ve been so busy recently with the house-move, visiting people and a few really nice auditions I haven’t had any time, so it was so nice to find myself with a day to relax yesterday!

I decided to cook up some chocolate cookies having seen the recipe when flicking through Tanya Burr’s book, “Love, Tanya”, on Thursday night – seriously those things look good! (p.s. the book is fab – seriously, pick up a copy – it’s really lovely!)

So I based what I was doing on Tanya’s recipe, which can be found on page 212 of her book, but ended up doing my own variations of them.


What you need

  • 200g Butter
  • 300g Caster Sugar
  • 1 large egg
  • 275g self-raising flour
  • 75g cocoa powder
  • lots of chocolate – milk, white and dark

I decided against the Daim bars from Tanya’s recipe for my version of these as one of the boys I live with doesn’t like them, and I didn’t want more reasons for me to eat them all and come out the size of a house!

Basically, you mix the butter and sugar together. Add the egg and mix. Add the flour and cocoa and mix again. If it is too dry to become cookie dough consistency, add a splash of milk.

Break the chocolate into squares and mix into the dough. Make dough into small balls and place on a baking tray covered with greaseproof paper. Not too close or they will all stick together.

Place the tray in the oven at 200 degrees. Cook for about 10 minutes. No longer. When you take them out they look seriously under cooked. Then leave them too cool. The really soft bits set and you are left with YUM!

I LOVE Green & Blacks Butterscotch Chocolate so I may have made a few with that chocolate in just for me – a couple of chunks in each and a decorative chunk on top (so the boys know which ones they are – and not to eat them!)

This was exactly what I needed to do with my day – a bit of baking, singing along to my iPod in the kitchen – a proper relax-day! I love the days when I can relax and cook things – I only with I could do it more…though if I did I’d be cooking stuff like this so much! Like I said on twitter yesterday: One day, I’m going to make some man really happy…..or fat! (Hopefully a bit of both!) Ha!

Now I’m going to spend the rest of the weekend in a sugar coma from the serious quantity of chocolate I have consumed. (I may have made double the batch for sharing with colleagues etc – we’ve now got 35ish cookies in the kitchen for general consumption…..I foresee my backside growing quite rapidly over the next few days!)
