Recipe: Skinny Flourless Pancakes

Just a quick one today – basically I just made these and am feeling a tad smug at how pretty they look and how yummy they are!

These are so easy to make and so good for you!

I worked out, including all the sweet fruit I put on top, 4 pancakes came to 370 calories – which for breakfast pancakes is nothing and I am STUFFED!!

What You Need:

(makes these 3, plus the one that I ate on the way to the plate!)

  • 1 banana
  • 2 eggs
  • Whatever topping you want

How To Do It:

  1. Mask Banana and whisk in the egg.
  2. Fry in a pan as per usual. (I put raspberries in the batter once it was in the pan too – yum!)
  3. Thats it! Enjoy!

    I've made these before but I always mucked up the banana to egg quantity I think because it never ends up being the right consistency and they stick to the pan and break and just basically…. disastrous. Maybe I should try them again!

    I think the trick is to let them cook all the way through before flipping them, or you end up with banana-ey scrambled egg….better to let them almost over cook than the alternative! 🙂
